The pomelo (Citrus maxima), also called shaddock or pummelo, is the largest citrus fruit and a sweet, mild-flavored relative of the grapefruit. Native to Southeast Asia, it is known for its thick, soft rind and large, firm segments. Pomelos are in season from late fall through winter.
Flavor profile: The taste of a pomelo is similar to a sweet grapefruit, but it is noticeably milder, with very little of the bitterness often associated with grapefruit. Some varieties can have floral or herbal notes.
Flesh: Pomelo flesh can be off-white, yellow, or pink depending on the variety. The juice sacs, or vesicles, are larger and firmer than those of other citrus fruits, which makes the texture unique—a pleasing combination of crunchy and juicy.
Rind and pith: The pomelo is characterized by its exceptionally thick rind and spongy, bitter white pith, which are typically removed before eating.
